Descendants of the local grapevines on the Adriatic side of Apennines Island, they can produce a very delicate wine with a pale yellow straw color and a golden green reflection. The rare high sugar content undoubtedly comes from the land where it is cultivated. Only dedicated and patient winemakers can grow grapes on such sensitive and thick soil to make wine.
Due to its balanced sugar content between refreshing acidity and complex minerals, Pecorino is a great choice for aged wines. Its aroma is very rich, emitting pleasant white fruit aromas such as peaches and citrus fruits, as well as very subtle floral aromas. The taste is refreshing, fresh, and lively. It is favored by people for its just right acidity and mineral flavor, suitable for pairing with soup and white meat, can be paired with cooked or raw slices, and can also be used as an aperitif.
